White Tea (lightly fermented)

White Tea, being lightly fermented, comes from the shrubs called Dai Bai and Daffodil Bai at the northern part of Fujian Province. Sprouts are silvery white and furry, leaves in green are also mixed in lower grades White Tea. Colour of drink is pale yellow, taste is fresh and light. It is classified into Silver Needles, White Peony, Gong Mei and Shou Mei, according to the parts being used.

Fuding Silver Needle
Only sprouts of Da Bai in Fuding are picked for making Silver Needles. Young sprouts are needle shaped, pale green with white hairy fur. Drink is mild, fresh with a light fragrance. It also has a special herbal effect in easing the stress when suffering from influenza and low fever.
Fuding White Peony

Da Bai in Fuding is also used for this tea. The farmers will pick two young leaves with sprout in the middle. Tea when dried or after made into drink looks like flowers, thus people named it as White Peony. Though taste of drink is mild, but still is a bit stronger then Silver Needle.

Fuding Gong Mei
Leaves and sprouts from Xiao Bai are used in this grade.
Fuding Shou Mei
Shou Mei is the by-product of Silver Needles. When farmers only used the sprouts of Da Bai for Silver Needles, the left over leaves are then used to make Shou Mei. Taste of drink is the strongest in White Tea.
