| Ti Guan Yin is the best choice among Oolong Tea. Its origin is Nanyan in Fujian Province. Land here is covered by fertile soil with numerous springs and brooks. Climate is mild, cloudy and misty all year round with an average temperature of 15℃ - 21℃ and annual rainfall of 1,700ml to 1,900ml. The harvest of Ti Guan Yin starts around “Crops and Showers” (a seasonal timing in Lunar Calendar that marks the start of rainy season) in May. The Tea Master has to precisely get hold of the variable weather condition, to control the fermentation applied to the tea. His saying is “Weather condition affects the quality of tea, Leaves condition also affects the quality tea”. In a good batch of Ti Guan Yin, blades of leaves are rusty green, glossy and frosty. Leaves are strong and tightly rolled up. The pale green stalks, dark green leaves with reddish border are unique features resulted from the precise control of fermentation. Drink is clear and golden brown, taste is refreshing with long lasting after taste. The specialty of taste and fragrance like orchids is most mentioned as “Harmony of Guan Yin”. |
Nanyan
Super Oolong |
| Besides a flourished cultivation of Ti Guan Yin, the farmers at Nanyan have also grown another shrub of Home Counties – Super Oolong. Leaves are similar to those of Ti Guan Yin, but smaller and do not have the taste and fragrance of “Harmony of Guan Yin”. |
Wuyi
Dao Hung Pao Select |
| Grown in Mount Wuyi of Fujian Province, a half-fermented tea with a legend of being a gift only fitted for Emperors in Chinese history. Originally there were four wild shrubs grown in Tianxinyan at Mount Wuyi, but now only two are left and the other two have withered. Farmers use twigs joining method to transplant Dao Hung Pao to the lower slopes of Mount Wuyi and have successfully cultivated the shrub in tea farms now. Leaves are long and twist, drink is bright red, robust with strong aroma and after taste is long lasting. A floral fragrance of osmanthus, also known as “Harmony of Rocks” is its specialty. |
Wuyi
Shu Xian Select |
| Mount Wuyi is a beautiful, weird place with numerous springs and brooks, and misty fog lingers around the Rocky Mountains all year round. Fields are built one by one in steps along the mountain slope, they are a famous geographical feature in Mount Wuyi. Leaves of Shu Xian are big and glossy black with strong aroma. Taste is robust with long lasting after taste known as “Harmony of Rocks”. Length of preservation will refine the fragrance and taste of new tea. |

| The tea is grown in Chaoan in Guangdong Province. Climate there is warm with sufficient rainfall all year round. Standard quality is assured by having each batch of leaves picked from the same species. Leaves are big and straight, light golden brown. Drink is strong with a light honey after taste. It has a special taste and fragrance that people named it as “Harmony of Mountains”. |
Dabu
Solitary Leaf |
| Solitary Leaf is cultivated in Guangdong and Sichuan Provinces, of which the wild shrub at Dabu in Guangdong Province is of better quality. It is named as Solitary Leaf because the common practice of brewing this tea is using only one piece of leaf. Colour of drink is clear and light green, but taste is bitter with a sweet after taste. |
Taiwan Dongding Oolong |
| Dongding Oolong is very often called as “Beauty of Orient”, another half-fermented tea of supreme quality. It is grown in Mount Dongding in Taiwan, with the best environment for growth of tea. The shrubs grown there are originally from Mount Wuyi in Fujian Province of China, but being transplanted and developed into a new kind of species in Dongding. The theories applied in fermentation and firing are very similar to those in Fujian. Leaves and sprouts are strong and come in whole with short stalks. Blades are light green, but light brown with red border on reversed. Drink is orange red with a strong and fruity fragrant, taste is mild with long lasting after taste. |
